Mistakes I made:
Adding ALL the heavy whipping cream in at once. You're supposed to do it gradually.
Using heavy whipping cream that wasn't very chilled. Make sure it's colddddd!
I picked a heavy whipping cream that was apparently 35% fat but unfortunately when I poured it in, it had the consistency of milk. I now stick to Bulla. It has amazingly thick heavy whipping cream that works wonders!
(Basically it was the heavy whipping cream that gave me that giant headache!)
Here are the ingredients to make the above :)
Red Velvet Cupcakes:
1 1/4 cups sifted cake flour (remember to sift before measurement)
1/4 teaspoon baking powder
1/4 teaspoon salt
1 tablespoons regular or Dutch-processed cocoa powder
1/4 cup (57 grams) unsalted butter, at room temperature
3/4 cups granulated white sugar
1 large egg
1/2 teaspoon pure vanilla extract
1/2 cup buttermilk
1 tablespoon liquid red food coloring
1/2 teaspoon white distilled vinegar
1/2 teaspoon baking soda
Cream Cheese Frosting:
250 grams cream cheese, room temperature
1/2 teaspoon pure vanilla extract
1/2 cup confectioners' (icing or powdered) sugar, sifted
2/3 cup cold heavy whipping cream (35-40% butterfat)
